THE SALVA CREMASCO
Salva is a soft raw table cheese, produced exclusively with whole cow's milk, with a washed rind, with a minimum aging of 75 days.
The origin of its name derives from "strachì da sàlva: cream stracchino hardened after spreading with oil and stored for the winter."
In the past, the people of Bergamo who came with their herds from Brescia and Bergamo needed to use the milk in excess and use it in the production of a cheese that could have a medium-long duration, saving the excess milk.
